Hi Scott, I am so sorry it took so long to get back to you.
I made an orange honey glaze, then I let the tofu marinate overnight, and then when it's cooking, I make sure to glaze the tofu.

Will be moving back to the Valley in the next few weeks, picking up my former job at the Biltmore, and hopefully getting involved in some great ghetto dining! Up for it certainly.
didn't get the sous chef job, didn't even get a call back. There are plans to relocate...more later.
