Bacon Wrapped Dates with Roasted Red Pepper Sauce
Serves 10 people
Ingredients
15 slices bacon or turkey bacon, cut in half
30 dates
Roasted Red Pepper Sauce
2 red peppers, roasted, skin removed, roughly chopped
1 c. heavy cream
1 T. finely minced chives
Salt and pepper to taste
Preheat oven to 350. Take half slice of bacon and wrap around date. Secure with toothpick. Repeat with all bacon and dates. Place on cookie sheet. Bake for 30-40 minutes or until bacon is slightly browned and crispy. If using turkey bacon, drizzle with a little extra virgin olive oil before baking if desired to help turkey bacon to brown.
For sauce, place peppers in blender along with heavy cream. Blend until creamy. Season to taste with salt and pepper. Add chives and mix with spoon. Serve bacon wrapped dates with sauce.
This is the original recipe. Instead of chives, I used sage. About 1 t. freshly chopped sage should do it. Then I added about 3 T. granulated sugar and about 3-4 T. of red wine vinegar. And instead of cream, I used milk. It tastes better with heavy cream. It sticks on the bacon better.
