vegetarian chili

3. tablespoons extra virgin olive oil (to cook with) 1. large red onion (small dice)
1. horse carrot (small dice)
2. celery ribs (small
dice)
3. garlic cloves (minced)
2. small shallots (minced)
3. hot peppers (look for some hot ones, i use the small purple spicy ones)
2. peppers (both yellow and red, yes! small dice)
2. bay leaves
1. sprig of thyme,rosemary and parsley
2. tablespoons chili powder
1. teaspoon ground cumin
1. cup sugar
1. small can tomato paste
4. fresh tomatos (chopped)
1. small can veg stock
1. large can kidney beans
1. small can black beans (both rinsed & drained)
1. cup white wine (get a bottle of some good stuff,so you can drink at dinner too) hell, get a bottle of red aswell
!!. kosher salt & black pepper to taste!
you may also add (some sweet corn, assorted mushrooms,yellow squash,eggplant and,zucchini)

i know this looks like a lot of food but you will thank me later for the left-overs.. chili is better the next day......

so, you will need to cook this in a big pot,slow & low. let it cook for 2 hours if you can stand it.
start with the oil in the pot to sweat the
onions,peppers,garlic and carrots.
then add your spices and tomatos,veg stock and beans
make sure the herbs are chopped fine and ready to go in next.
let the chili cook. drink a beer. watch cartoon network (adult swim) and when its smells to good to resist,dig-in!!!

Is there an alternative to the white wine? Or does the alcohol definitely cook off completely? This looks super tasty, but I cannot drink alcohol at ALL, alas.
