Speaking of Wisconsin, here's a great article about the intriguingly named "Marcelle’s Gastropacalypse Test Kitchen."

From the article:
"Her gastropacalypse theme comes from a “a daydream I had about what I’d like to eat if the world were about to end.” The recipes are “reinventions of favorites, or re-combinations of flavors and ingredients I hold dear to my heart.”"
There's a bit about chicken and waffles, and then a delicious-sounding concoction: "The Ba’can Pie, a.k.a. pecan pie with bacon, ...inspired by a couple of bacon sweets.... The pecan pie, studded with pieces of nitrate-free bacon, also features bourbon, as well as bacon grease in the crust."

Hey, thanks for posting this! I'm actually doing a waffle-battered fried chicken reprise at the end of the month and I'm going to use a meat mallet to flatten boneless chicken breasts before I batter them to make them look more like waffles!
