Lookng to start my own underground restaurant..

I found this site doing some research. And I can not get off it!! I love this site...The creator is a Geniuse..

Want to start my own underground event, have some ideas, but looking for a few more...any suggestions on how to get started would be great...

My thoughts. The two seatings is w a y t o o much work. This is more important in a restaurant, like a fast food restaurant or catering to tea teetotalers. My advise is to cater to the wine drinking crowd - which means advertising on your local wine discussion group. The participants will be more interested in a longer evening with spread out courses and willing to pay a premium for the single seating - not to mention game for just about anything you can dream up. Have descent stemware and plenty of it (Costco is fine) and have storage space (cooler with ice) for wine storage.

LOL... Been in business 20 years this year...Cooked in a little bit of everything,...Schools, private clubs, hotels, fast food etc. Currently reside in New Hampshire and Cook in a local hospital...Though got comfortable as a line cook, just busting with ideas...some might work, other not to sure. But I live in an apartment, with a nosey neighbor...so...my " underground " restaurant...Though, it is a passion of mine to serve fresh food to people who love it, I would eventially like to turn a little profit...I just started to rearrange my kitchen around, and meassured my living room..lol

what do you do? where is your place? There are things you can make that can sit out. so if people show up you just hand them something.

I like it...Plus, would save a lot of time and not to mention money..on rearranging the living room. I live in a small place anyway.... Being in the business for so long, it will give me a better chance to just go " crazy " with no limits or boundries

Sounds interesting. But 2 seating is a lot of work. Why not make it one longer one. Like from 6p-11p. people move in and out. you come. Get 3 apps, then dinner if other show up they get their apps... and so on..?

I've noticed that a lot of " undergrounder's " have done the family style with multi course selections... I thought of offering limited menu, ex...3 apps, 3 entree's, etc....and offer two seatings...say..5:o00pm, then 9:00pm....I have room for 4 two person tables.....what do you think
